Call me Queen of the Larks! Following my most recent trip to the east coast, I finally vanquished my night owl tendencies. 3-hour jet lag can do that. Awake and bounding out of bed at 6:30 a.m. day after day, the mornings were my oyster. I had tamed the beast! And then…daylight savings. Since March 13th, I haven’t made it out of bed before 7:20 a.m. – and that’s on a good day.
Even this creamy Bircher Muesli beckoning from the fridge doesn’t rouse me from my rumpled sheets.
Bircher Muesli
Serves 4
½ c. | Rolled Oats |
2 T. | Raw pumpkin seeds |
1 T. | Flax Seeds (I like the toasted ones from Trader Joes) |
1 T. | Coconut (unsweetened and ground fine, if possible) |
½ c. | 2% milk |
Pinch | Cinnamon |
¼ c. | Greek yogurt |
½ c. | Apple, chopped |
½ c | Fresh fruit (bananas, strawberries, blueberries – whatever is in season!) |
Combine oats, seeds and coconut in a bowl. Pour milk over oats and add cinnamon. Stir well, cover and place bowl in the refrigerator overnight. Add yogurt and apples and stir well. Garnish with fresh fruit.
