Culinary School Pre-work

The assignment – write an essay about myself and what brings me to culinary school.


I begin by writing an esoteric piece about meeting Jean-Georges Vongerichten’s grandmother in a Strasbourg boucherie, the same boucherie where my grandfather apprenticed in 1907 before immigrating to America.  I write about food being a celebration of our history and culture, how we nurture with food and how regional cuisine speaks of its inhabitants.  I talk of flavors stirring remembrances of times past and how memories are made while surrounded by food.  I speak of food connecting people.


…and then I take a step back. Save my musings for this blog, right?  This ain’t no English class – it’s about the cooking.  Chef wants to know who I am, why I’ve decided to take his class and what am I going to do in the future.  Just the facts, Ma’am.  Rewrite.
